Want to get started hot-smoking fish and need tips...

So a few of the local ponds get stocked with rainbow trout during the winter and I figured this might be a good time to buy the smoker I had been wanting for a while now. I'm planning on buying a low-cost electric smoker, either the Master Forage dome smoker or the Brinkman Gourmet electric...

What do you do with leftover pie dough?

My grandma would use the leftover "rollin's" to make what we called cinnamon rolls where you just sprinkle sugar and cinnamon on the dough pieces and roll them up and bake them with the pie.

Has anyone tried the Eagle Brand sweetened condensed milk pecan pie recipe?

I want to try this recipe for pecan pie to bring to a potluck I'm going to. The theme is wild game and I want to make a pie out of the pecans I collected (I don't hunt, I gather ). Does this recipe look good to ya'll. There are so many dang recipes out there for pecan pie, I figured I'd...

Thought it was hominy, what did I buy??

I went to a Mexican grocery store and bought what I thought was dried hominy. It came in a unmarked package under a sign that said "maiz blanco" or white corn. Next to it was packages of "maiz morado". It looks like what I would think dry hominy would look like (never seen it in person...

    Winter Squash Varieties and Preparations

They're selling a mix of winter squashes at the grocery store out front like they do with pumpkins and I'm thinking I'd rather eat them than use them for decoration! Is $0.69/lb cheap for winter squash?? If that's a good deal, it might be worth buying one of the gigantic Hubbards they've got...

    How to use: Perilla/Shiso?

I have tons on shiso/Perilla frutescens plants coming up and I'm wondering how I could use them. I found this recipe: Korean Perilla recipe that I might try. Anyone ever cooked with this stuff? It's nice and leafy and has kind of a minty smell.

    Asian freshwater clams

(This is almost appropriate for the "wild game" forum too) Has anyone cooked and eaten these...or even heard of them? They are a non-native clam from China that are in most lakes around here. One of my professors from Taiwan goes out to the lake and collects them with his family to eat...

    ISO Crab meat stuffing recipe

My friend got back from a fishing trip with some flounder filets and wants me to cook them up baked and stuffed with a crab-based filling. Does anyone have a recipe they like for a simple crab stuffing that I could use for this application? I surveyed what's out there on the web and I'm...

    Ideas for ground pork uses?

I bought a couple pounds of fresh ground pork that were for sale and figured I'd come up with some use for them. Have any ideas? I thought about making fresh country sausage or maybe just using it in place of ground beef. I don't have a ton of exotic stuff available to me so can't do anything...

How to remove raw crawfish tail meat?

I have been trying out crawfish trapping lately and am starting to have some success. I have never caught enough crawfish at once to make a meal so I'd like to freeze the tail meat and build up a stock of it in the freezer for cooking later. I have never bought one of those packs of frozen tail...

Can I freeze jelly for canning later?

I'm living in Georgia at the moment for a temporary job and I've had the awsome opportunity to harvest a bunch of native fruits that are just now in season, mayhaws being one of them. Unfortunately, I don't have my canner or other canning supplies with me, but I was wondering if I could go...

    Greek Shepherd's Pie?

I am trying to find a good recipe for Greek-style shepherd's pie. My sister says she tried it once somewhere and really liked it. Anyone have a clue what makes the Greek version different? According to her, it had a mash-potato top and ground beef. There are quite a few recipes online and...

    Osterzopf? German Easter bread?

Has anyone made Osterzopf before, or at least eaten it? Most of the recipes I have been able to find on the web are in German, and I'm sure I could figure out all the measurements and things, but it would be nice if someone had a TNT recipe to share (in English ) There are a bunch of...

    ISO Sauce Piquante help

This might be an ethnic foods question since it's Cajun... I was wondering if anyone has made sauce piquante before. I saw it featured on a tv show the other day and it sounds pretty good. It was like a spicy tomato stew with any kind of meat in it. There are recipes online, but I was...

Anyone know how to write a CV?

Hi guys. Thanks for taking the time to help me out. It's been a tough time to be just out of college and looking for a (good) job. :glare: I'm trying to apply for this internship with a company in Kansas and when I sent them an email asking about applying, the guy said it was "very informal" and...

I'm gettin' a new truck this weekend!

And I can't wait! It'll be my first car that I actually bought on my own. It's a 2004 Ford Ranger XLT, 4 cylinder, standard transmission, dark grey. Nothing fancy, I'm mostly using it to commute but I'll be moving a lot when I go back to school so I needed something to haul my junk around in...

Has anyone tried salting green beans?

I've heard this is the best way of preserving green beans because they keep most of their original texture. I've blanched/frozen green beans before and I really don't like how they turn out so I was looking for another way to preserve them. There's not a ton of info on the web about it. It...

    ISO Pickled Beet Recipe

I personally dispise pickled beets, but my mom and grandma love them and with a big crop of beets coming up I'd like to pickle and can all that I can't eat fresh.
