Next time I'm traveling with my knives

Why not just carry a good but cheap sharpener? Even a cheap knife can be alright just sharpened. I would just hate to lose my good knives.

    New here - need advice

I own a block of Henckels five star classic knives. I use the Chef knife and the paring knife. I have never used any of the other knives (but I just use pre-sliced bread). I've had the set for about ten years now. I use the Chef knife about 95% of the time. I use the paring knife more as a...

    Ken onion chef's knives

I believe the difference is going to be the steel. Is it worth $100 more? I let more knowledgeable people speak to that. VG10 (the classic line) is still oodels ahead of the German (Wusthof, Henkels, etc.) with regard to being able to hold an edge and take a sharper edge. It's very good...

Anolon Advanced Cutlery - steel composition here.

I decided to start a new thread to help anyone who uses searches. I contacted Anolon about their Advanced Cutlery line and it's specific makeup. The following is the reply I received from a representative of their company, Gary Green. My thanks to Gary Green for the information and I hope this...

    Calphalon vs Anolon vs Norpro...opinions?

Freehand but I am used to the steeper 20 deg angles I've use on my current German steel knives. I'll have to practice the 16 or so deg angle (so it feels natural to me) of Japanese steel prior to actually doing any sharpening.

    Calphalon vs Anolon vs Norpro...opinions?

I might start out with a Tojiro DP to get a feel for Japanese steel.

    Calphalon vs Anolon vs Norpro...opinions?

So I decided I wasn't going to get any of three from my first post. After doing some comparison shopping I realized that A. The $20 Calph wasn't really that good of a deal and the Norpro was just looking way too cheap. The Norpro had no contact address, no guarantee (although doesn't...

    Calphalon vs Anolon vs Norpro...opinions?

After searching for the steel it also appears ScanPan uses X45 CrMo V15 for their knives. After a search I've seen jpaulg recommend ScanPan as medium range German knives (I'm assuming you mean the Classic line not their Damascus steel line?). I read the Amazon reviews for several...

    Calphalon vs Anolon vs Norpro...opinions?

Whoops, I thought I had said it was the Contemporary line. I noted the C. line, just not that it was the same as the knife I was looking at. Sorry.

    Calphalon vs Anolon vs Norpro...opinions?

Do you think the Calphalon is better than the Anolon or are they too similar? Compared to Wusthof? I've been reading this forum for a good part of the day and I know some don't hold the German steel in high regard. Still, for comparison's stake, using Wusthof as one of the top rated German...

    Calphalon vs Anolon vs Norpro...opinions?

Hi, I was at Marshall's today and they have... 1. Anolon Advanced 7.5" Kyotsu 2. Calphalon 7" Santoku 3. Norpro Klever 7" Santoku I didn't realize Anolon was making knives so I was suprised to see one on the shelf. I know Calphalon made knives. I've never heard of Norpro. The Anolon lists...
