Well, I took the plunge and ordered the Hattori HD 240mm and the 135mm petty. The Gyuto is out of stock and won't ship for a month. Even without being made by Hittori himself, I never heard a bad thing about it espically from people who own it. I can't wait for it to arrive. Thanks for all the...

I love the Hattori KD knife. Had one been available I might have impluse bought it. I still have it on my 'to do' list and may end up grabbing one in the future. It seems to be everything I was looking for (except the price) but I think it's too nice to pass on.

Any recommendations there? As for the Global "Sha Ra Ku Mono" I'll see what I can dig up on it. Thanks for the tip.

Thanks for the feedback so far, looks like a good start. While I don't have to have suminagashi, I would perfer it. They look to beautiful to me and for the price range I am looking at...Why not? If it's a nice blade at least. Someone told me today I should 'buck up' and look at the Tanaka. I...

Hello all, I am seeking help on a purchase of a new chef's knife. I currently use a Global G-2 and (for the most part) it made it through school intact. I perfer the Japanese Gyuto knives with western style handles. I have narrowed my selection down to a few knives and am...
