    You could probably sneak a lot of vegetables into a filling for homemade ravioli, not to mention the dough itself if you are making that from scratch too. You can sneak just about any vegetable into a tomato based sauce for pasta.

    Just a suggestion - you could prep the potatoes and freeze them for future use. If I had a bunch of potatoes that were going to go bad soon, I would probably peel, chop and par-boil a bunch of them for home fries and french fries.
