MinoSarp3 Plus edge angle???
Hi, anybody got any idea what the edge angle on these might be? Since the are advertised being for global knives, I am guessing that it would be around 15. I hope to us it on a double bevel Japanese Gyuto Chef. Been using crappy knives with 22 degree angle so I am looking foreword to using...
