    One minor point of clarification. The white fuzz on the surface is caused by the bacterium, Brevibacterium linens - not a fungus. Put some fig jam on the brie, and then wrap in puff pastry, brush with an egg wash, and bake just until the pastry is golden brown. It is delicious. Brie at room...
