    crackli"' rub the meat all over with olive oil and then sea salt, have a hot oven then after 1/2-3/4 hour, turn down to 180 or what ever medium is on your stove, don't poke it and it will be great. crusty61

    Why is my caramel sauce grainy?

    caramel did you use a dark sugar, (raw) and did you stir after it came to the boil, i found that spoilt the whole deal, but the sugar does make a difference.
