    What is comp BBQ cooking

This topic often comes up, is comp cooking a sport and are comp cooks athletes. I always vote no. To be a sport you need athletes and to be an athlete (as a cook) you need to make an athletic move. Sure it takes stamina but BBQ cooks aren't athletes. Golfers make athletic moves and are...

Repeating teams get a week head start then applications go out to the other teams. Harpoon is the most cooker friendly and has to have the funnest Friday night on the circuit...

My team has secured a BEER sponsorship for next season by a local brewery that we love. Six cases a contest. I also secured a meat sponsor for this year. A Northern New York farm...

    December Bullsheet

Wow, I don't think I've ever had my chops busted as much as in the article re-caping the Oinktoberfest contest. I've heard about the article from others (including Wittdog) but until it was sent to me last week I didn't realize it was so bad. Yesterday I got my Bullsheet and saw it in all it's...

    Vacuum tumbler

Has anyone tried a vacuum tumbler. I got one last week and have chicken in it right now. This is the forth time I've cooked chicken since I got it (practicing different marinades). They seem to work awesome, in 20 minutes the marinate flavor penetrates through the meat.

    How Much Food

Mike, I always plan on 8oz total serving on the sides (1 cup) so you might be a little high. Depending on what size bun and the type of chicken pieces you use then the pork and chicken are probably good. I'd try to use a larger bun and figure around 6oz per sandwich. Chicken is real cheap, I'd...

    Bel Air anyone...

If anyone is going to Bel Air MD next weekend, stop by. I'm hoping to get to the site earlier than last year ( I snapped a spindle off the axle on my overloaded pit when I hit a pot hole in north Jersey). There were cooks behind me last year who told me about this site, I forget who they were...

At this weekend's contest , Harpoon , they let the teams vend. Last year I did a half-ass attempt and made some money and had a ball. This year I'm cooking 60 slabs extra ribs along with a few extra butts, hot dogs ( every one who comes to a contest asks if we sell them) and chicken drum sticks...
