    need help with beef ribs

    Had a guy call and wants me to cook brisket and beef ribs for 50 people. I've got the brisket down but haven't done beef ribs but once on a small offset with poor results. Got a Lang 84 now, using hickory, white oak and apple, need some guidance on the ribs. All help appreciated.

    it's 25 degrees but that's ok

    Got up and pulled the smoker out and fired her up. Gonna do 2 brisket and 6 butts. This afternoon I'm going to try my first whole ribeye and some armadillo aggs. Will try to get more picks.

    would you get a catering license?

    Right now I'm set up as a custom cooker, take my stuff with me and do it onsite, usually do butts, brisket and ribs plus bean, slaw and potatoes. would it be better for me to get a license for catering although slaw is the only thing I prepare at home.

    I'm doing a reception for 100. 2 meats, butts and brisket, want to be sure to send enough, cooking 8 butts but wondered about how many briskets to do, should I use packers or flat. thanks for any help.

    to wrap or not to wrap

    need some thoughts on wrapping butts and brisket with foil versus not wrapping. I've been wrapping after smoking and cooking for a couple of hours then putting in a cooler. show me a better way, lol :D 8)
