    Turkey leg and wing thoughts?

Well everything came out amazing!! I don't know why I haven't done turkey legs and wings before.... I added a higher rack to the UDS so I could fit all the turkey. I ended up throwing some Yardbird run on the legs and wings a few hours before they went on the UDS. Let's and wings loaded...

Take a look at my "UDS Build" thread linked in my signature. It came from a $20 Big Lots charcoal grill. It fits pretty well. Not perfect, but good enough....

    Question about Weber Rotisserie ring?!?!

This is going to be a weird question, but can someone tell me how far the Weber Rotisserie ring sits inside the kettle? It looks to be about 1.5-2", but that's about all I can tell from looking at pictures. I need a more specific dimension so I do not mess up my UDS. I am still trying to...

    Turkey leg and wing thoughts?

Nick - Have you tried that apple brine before? It looks to have a lot of ginger and a ton of brown sugar... Is that correct? I love the Wolfe citrus on chicken!!! Thats a good idea for the turkey pieces.

    Turkey leg and wing thoughts?

Let me try not to ramble in this post.... I am looking to throw some turkey legs and wings on the smoker for memorial day. I have always wanted to try the brine listed below, that I saw on the Weber forum while back. I wanted to get peoples opinions this brine? Has anyone else ever tried this...

Anyone near VA Beach, VA with a Weber rotisserie

This is a random question... I am looking to add a rotisserie to my UDS, but of course it's always iffy on whether the different Weber rings will fit or not. I have been looking at the actual Weber ring or the one piece stainless ring shown on the Rib-O-Lator website. I guess I am trying to...

    1st St.Louis Spares UDS

I have done mostly Boston Butts until now so I never needed a higher rack. I planned out the rack heights with the thought of adding one right near the top. Guess I should get my drill out!! Haha

    1st St.Louis Spares UDS

Thanks for all the compliments everyone! I think they came out pretty well. I probably cooked over 100 pounds of pulled pork on the UDS last summer, so I've decided to do all new stuff this summer. 1st St.Louis Spares UDS

Decided to fire up the UDS for the first time of the summer. I have been doing pulled pork pork mostly so thought it would fun to give spares a try... I did a lot of research here and ended up cooking them at 225 and did 2.5-1.5-.75 for my timing. They came out amazing! Never trimmed my spares...

    Double stacked extension ring ribs

Great video and neat idea of double stacking the extension rings! That injector system looked cool too. I love gadgets and couldn't pass up getting one of those. Any information you could pass on about that? Thanks!

    Travel with the UDS?

I am getting ready to move about 1000 miles and I am looking for a good way to transport the UDS. I dont have a truck or this would be really easy. I do have a class III hitch, so I was thinking of using a hitch platform or something. Has anyone done this before? Thanks in advance. Jeremy

    Foiling Boston Butts?

I actually have never done it without the foil. I may have to try that out... It's too late for time around, but I am pushing to throw something on the smoker every weekend for the next could months.

    Foiling Boston Butts?

I guess this is more of random question about foiling. I normally bring my BBs to around 185 and then foil them with a little apple juice till around 205. When I foil them, I just wrap a few layers of foil around them and try to seal them as well as possible. Do people ever use those small...

Best way to reheat chicken drumsticks?

Yesterday I brined, rubbed, an smoked aout 10 pounds of drumsticks to take to a cookout this afternoon. I meant to ask this question earlier, but I was wondering what is the best way to reheat the drumsticks? Right now I have them sealed in foodsaver bags and was planning on doing the hot water...

I figured I'd post my build here even though I have my own build thread, but this should be helpful to people trying to start... Top is cut off and the inside is cleaned.... Laid out some tape and marked the hole for my BGE vent... I cut the hole out using the Dremel and everything is ready...

That's exactly what I was going to try first. I use the Wolfe original rub for my pulled pork and I LOVE that stuff. That's awesome... I'll have to check out that book.

    Brisket rub..?!?

Last weekend I rocked my first brisket. As I have been finishing up my last leftovers, I'm planning for the next brisket. I used the TexasBBQRub Brisket rub this past time and it was awesome. I would love to be able to make a similar rub myself, since I always try to control the ingredients...

    First brisket... A few questions.

I follow patiodaddio's blog, but somehow I missed that one... Awesome idea. Kinda looks like a pulled pork empanada. I had to drive around and deliver BBQ care packages to family members this morning. I'm going to grab some biscuits and make some if those tonight. I may have to pick up a...

    First brisket... A few questions.

Everything came out amazing...!!!! The brisket was dead on what I wanted. Flavor was great and it was really tender. I dumped the juices from the foil over the top and that sealed the deal. The pulled pork came out jsut as good as normal... I didn't realize, but I cooked all this BBQ for...
