ISO old fashioned choc fudge

dh has requested chocolate pecan fudge for christmas this year. I've made fudge once, or let's say I tried to make fudge, it flopped. I need a great recipe and all the secrets! Super chocolatey is always a plus! Thanks everyone!

a candy thermometer will make things a lot easier, and be sure to wash down the sides of the pan so sugar crystals don't form
