Chewy Cherry Coconut Bars

These bars are soft and chewy and packed full of flavor.

CHEWY CHERRY COCONUT BARS



CRUST
1 cup(s) BUTTER; Softened.
1 cup(s) SUGAR
1 EGG
2 cup(s) FLOUR

TOPPING
1 1/2 cup(s) COCONUT
2 EGGS; Slightly Beaten.
1 teaspoon(s) SUGAR
1 cup(s) CHERRY PRESERVES
1/4 cup(s) BUTTER; Melted.

For crust: In a mixing bowl, cream together butter and sugar.
Add the egg and mix well.
Mix in the flour and mix well.
With lightly floured fingers, pat crust into a greased 13 x 9 pan.
Spread preserves evenly over the crust.

For topping: In a small bowl, add eggs and slightly beat them with a fork.
Add coconut, 1 teaspoon sugar and melted butter and mix well.
Drop coconut topping by spoonfuls over preserves and carefully spread out.
Bake at 350 degrees for 25 to 30 minutes or until coconut is a light golden brown.

Cool completely and cut into squares.

I need to quit opening your postings, Ol Blue, because when I do I gain 5 pounds just reading it and can't keep my mouth from salivating. These look scrumptious (you take gorgeous photos) as I can't resist cherry anything. Now I know what I'm going to be making for guests next weekend as I can find both cherry preserves and coconut here and it will be such a change from my regular boring desserts.

OMG Debbie, these bars look so yummy! Thank you for posting the recipe!
Next time I go to town, I am picking up a couple jars of those cherry preserves, as I want to make these these bars, and have extra preserves on hand so I can make your delicious tasting Cherry Pork Chops once again.
