I stuffed the stuffing into a pan on the stovetop and cooked it there. Then I stuffed it into a serving bowl.

I think I might try putting some stuffing under the chicken. I've done that when oven roasting thighs and the stuffing was great after absorbing all the chicken drippings.

When I make stuffing for Thanksgiving, I use Bell's seasoning. Mom used Bell's and using it ensures my stuffing is just like my mom's. Bell's also sells a Stovetop style boxed stuffing mix (that tastes the same) that you can make in a few minutes on the stovetop. It's a nice change of pace from potato or rice.
