Spinach Orzo Feta Salad


Orzo noodles
Fresh spinach
1 can of garbanzo beans
Pine nuts (optional)
Juice from a freshly squeezed lemon
Lemon zest
Feta cheese


Boil water and cook orzo noodles. While the orzos are cooking rip fresh spinach and place into mixing bowl. Next put in garbanzo beans and pine nuts if your using them. Once orzos are cooked to your liking strain and cool under cold water. Next mix in the chilled orzos to the bowl along with juice and zest from a lemon. Mix one final time. Serve in individual bowls. Add feta to taste
