Anyone know any good Easter recipes and/or some healthy things to put in the kids baskets?

I saw these the other day and thought they would be good for Easter baskets: Popcorn Ball Easter Eggs wrapped in colorful cellophane. I would make them more the size of an egg.

I baked these cookies for the baskets, but cut them in mini egg shapes. I hope the kids like them, because they are quite healthy. I guess we will see. I added some other non-food items so that I wouldn't have to put chocolate in the basket.

I know it's not a recipe but we switched to doing tangibles in our baskets. Coloring books, DVDs from the $5 bin, crayons, pencils, things that last. Then we add just one special treat. This year I'm making Peeps cupcakes and fruit tarts.
