Rule number in cutting any meat, fish, or pultry is : Make sure your knife is sharp.

Get it as sharp as you can and keep it that way. I'd also reccomend a forged blade over a stamped one because they are a little sturdier, and have more weight to them.

Sorry asabine - the link I posted wasn't the video demo directly - it was to the page where you could find it. The video demonstrations do work (I just checked them) but require you have "Windows Media player" installed - or another video player that can play "Windows Media" format. This is buried in the fine print down on the bottom of the page:

"This video feature requires Windows Media player. Click here to download the player from Microsoft."

If you get a "pop-up" message that there is no network connection - click on the "Try Again" button ... this has happened to me a few times.

But there is more than one way to get to the page with the Meat and Poultry Cooking Demos :

1. Go to the FoodNetwork home page
2. Click on the Cooking tab at the top of the page - that should bring you to this page.
3. Scroll down the left hand side of the page under COOKING and click on Cooking Demos - which should bring you here.
4. Now scroll down and click on Meat/Poultry ... which should bring you here.
5. Finally, scroll down the page and look for the section titled "All Meat & Poultry Videos" and click on the link for "Remove Silver Skin".

If you have any more problems finding it please send me a PM (Private Message) and I'll try to help you figure out why you're having a problem.

If all else fails, here is the page with the text and pictures.

Now, as for the Meatman site ... they maybe didn't pay their bill? That's a shame because they had a good site with good info and charts.
