I like this cooked in the oven but grilled is wonderful. So tasty and easy makes a great appy or with a salad and hot french bread and glass of wine it's outstanding. All you need to do is like shrimp.
Take 16 slices of thin prosciutto or serrano ham, 16 jumbo shrimp peeled and cleaned tail on preheat your oven to 325. While cleaning and wrapping the shrimp in proscuitto make your dressing:Peel and seed 2 tomatoes, put in a bowl and then add 4 tab. fresh chopped parsley, 1 small red onion finely chopped., 1 tab. capers.zest 1 large lemon,4 Tab evoo and 1 tab. sherry vinegar. Rub each shrimp wrapped with ham with a little evoo put shrimp in baking dish in single layer bake 10 min at 325 remove from oven and pour dressing over shrimp, serve right away or you can let this come to room temp.
