Veggie Stew TNT

This makes a nice side dish or is good on crostini. after you moosh it. Trim 1 onion, into bite sized pieces and cook it in 3 tab. evoo over med heat til tender about 5-7 min. Add4 roma tomatoes,2 Yukon golds, 1 med eggplantand 1 red,1 yellow bell pepper all cut into bitesized pieces, Add salt and pepper, cover and cook sitr now and then for about 40 min or til veggies are tender and most of liquid has evaporated. If it gets to dru add couplle tab. of broth Serve warm adding some fresh parsley, and basil a sprinkle of parmesan is wonderful. You can also add in 5-6 beaten eggs don't stir just cover the pan and let them set about 3-4 min.
