"Shambles" Streaky beacon and pork Pasta sauce
1 tablespoon olive oil
60g Streaky bacon diced
200g Lean Pork diced
½ teaspoon Ginger
1 medium Apple Sweet peeled cored and diced
1 sprig Rosemary fine chopped
1 sprig Thyme fine chopped
1 clove Garlic
1 dash Dark soy sauce
1 dash balsamic vinegar
2 tablespoons creme fraiche
1 tablespoons Parmesan cheese
12 Cherry tomatoes halved and cooked in a low oven for 2 hours. this intensifies the flavor
400g crushed tomatoes
1 Put cherry tomatoes in the oven and cook slowly for two hours on a non-stick tray
2 In a large skillet heat the oil and add the streaky beacon and pork untill just turning brown Add the crushed tomatoes and cook for 5 minutes
3 Add all the other ingredients, cover and simmer on a very low heat for one hour
4 Remove lid and simmer untill the sauce becomes thick. remove from heat and add the creame a little bit at a time stiring all the time. add the cherry tomatoes abd stir over a low heat untill heated through. Serve with Pasta or noodles.
