I'm planning my wife's birthday dinner on Saturday. My only direction is: something reminiscent of Chicken Tikka Masala. We are both vegetarian, so we don't eat meat. Dairy is OK, though.
I initially thought of koftas in a butter sauce, but nothing really struck me. So far, here's what I've come up with:
Bake tofu in a Chicken Tikka marinade with paprika, cayenne, ginger, lemon juice and yogurt.
Fry cauliflower with garlic, ginger, cumin, coriander, turmeric, a serrano pepper and garam masala. Build a tomato & cream sauce from that and simmer the cauliflower, then stir in the Tofu and some peas. Serve with Naan & Basmati.
I'm still not sold, though, and I'm not sure why. Do you guys have any comments on this or any other ideas?
