What is your favorite apple for applesauce?

It is getting to be apple season, so my thoughts go to home made apple sauce. I have been using Red and Yellow Delicious, and some staymans; I am thinking about changing my varieties, I would like a more tart flavor. What are your favorites for making apple sauce?
 
:)You want to use what is called cooking apples which means the apples used for baking and cooking as they are tart like Gala or my absolute favorite Granny Smiths there are alot more but I cant think of them right now but somebody here does.The apples you are using are not the right kind I myself dont even care to eat them raw just too bland for me.
 
Granny's for baking...

...but here lately, I've discovered Pink Lady and Honey Crisp. My favorite eating apples were Jonathan and or Winesap. But the Lady and the Crisp top them both, for me. I don't know how they'd be in a sauce or pie, but alone, they are outstanding.
