Chocolate (Baker's), stale?

I made a Chocolate Merange Pie, but it tastes funny..(Stale)

The baker's Chocolate and the Vanilla Extract in my pantry are quite old, (3 yrs.)

Do these ingredients go bad that quickly?

The chocolate was most likely stale, but the vanilla extract should be fine, especially if it contains alcohol.

As stated by Giggler, that chocolate was more than likely toast. Vanilla was probably ok. But three years isn't going bad quickly, lol. Unless we are talking Twinkies, they don't have a shelf life, they have a half life.
 
How do you store your chocolate, Giggler? If it's near a heat source, it probably won't last as long. I've used older chocolate, and it was fine. Agree about the vanilla, it will last a long time.

Bummer about your dessert.
