My goodness, my bananas!

I decided to substitute bananas for apples in this: Caramel Apple Oven Pancake Recipe | Recipezaar
just to see what it would be like. It was alright, but I think I prefer it with apples. The thing is, all the banana slices seemed to take on this fleshy-appearance, like pink prawn flesh with little red veiny-looking things. I tried to capture it on my webcam but it's not very clear.

You can see that parts remained yellow, while others turned pink. You can't see the tiny red threads throughout the pink area. It tasted just like banana but it looked very disconcerting. Is it well known that cooking banana in caramel at 200 degrees C summons creatures from imperceptible dimensions?
 
Ooh...I have never heard of a banana turning pink before! I even Googled "bananas" and "pink"...I got nothing.
