Can I substitute simple syrup for corn syrup?
Can I substitute a simple syrup for corn syrup in peanut brittle ?

Yes, but be sure to cook it down to the same consistency as corn syrup.
I've been subbing it for years.

Maybe I'll have to get a small bottle of corn syrup. It's been so long since I used it that I can't say I remember the consistency. It's thicker than maple syrup, right?

 You're both welcome. I would use so little corn syrup, it wouldn't make sense to get a bottle of it for my too small pantry.
