This can be served frozen or chilled. Im serving it with a BRIGHT red Raspberry sorbet..

if i was serving it chilled i would make a nice peach chutney ENJOY!!

Ingredients
32 amaretti biscuits
4 Peaches, skinned and stones removed
4 egg whites
100ml almond-flavoured liqueur, such as Amaretto
300ml double cream
2 peach, sliced, to decorate


Method
1. Press the crumbled amaretti firmly into the base of a 10cm flan ring.

2. Blend the peaches in a jug blender to a smooth puree.

3. Whisk egg whites until soft peaks form.

4. In a separate bowl, add the amaretto to cream then whisk until stiff peaks form.

5. Fold the peach puree into the amaretto cream.

6. Gently fold the whisked egg whites into the peach mixture.

7. Spoon the peach mixture over the amaretto base.

8. Chill in the refrigerator for 2-3 hours or freeze for 2-3 hours. If frozen, remove from the freezer 20 minutes before serving to allow to thaw slightly.

9. Decorate with peach slices or with the above toppings mentioned

Now Robert, amaretti would probably make a good cheesecake base and/or flavouring for the cheese mix too! Hop to it.... :) :)

They are little Italian almond biscuits and the liqueur Amaretto has a similar taste.

Yes but you can do what i did for this event.. i served this dessert

i couldnt be assed making them sooo i took...

Almond Flour....toasted... with brioche bread crumbs.. mixed with brown sugar and toasted sliced almonds made the most tasty crust..

Robert ill give ya that one love! use that for your cheesecaks :)

But ya go into any grocery store you will find the biscuits
 
Oh ok.. well broiche is a sweet type of bread... you can easily buy it in a grocery store... When i was making this in Denver i didnt have amaretti cookies sooo i just made that crust up!


but amaretti cookies are easily found as well in Grocery stores..
