I have this in the oven right now, and am begginning to smell the spices..Emmmm
about 4 c. granny smith apples, peeled and coarsley diced
4-6 Tab. brandy
2-c. sugar
1/2-c. veggie oil
2-eggs
2-c. a/p flour
2-t. cinnamon
2-t.- baking soda
1-t. salt
1-t.nutmeg
1-c. chopped nuts, your choice, I used pine nuts
1-c. plumped raisins
1/2-t. cloves
slightly sweetened whipped cream or softened vanilla ice cream
after you peel and coarsley dice your apples, put them in a bowl with the brandy. In a large bowl beat your sugar,oil and eggs..blend well. Now sift all the dry ingredients into the egg oil mixture. Fold in the apples, nuts and raisins. Pour into a greased 9x1392 in. pan. Bake in preheated 325 oven for about 1 hour or til a toothpick inserted in middle comes out clean. Cool, serve with the whipped cream or a scoop of soft ice cream..
