ISO yummy sugar free dessert, for diabetic, with Sweet 'N Low?

I want to cook a dinner start to finish for my mom and her boyfriend. I already have the batter made for her dessert (chocolate lava cake) but I don't know what to do for him. he has type 1 diabetes and the only sweetener we have is sweet n low. I was thinking about making him this fruit tart-type thing i made before. I made him a separate one because i felt guilty about making them for everyone else and it turned out ok but i thought there might be something better. Thanx!

cheese cake works well with splenda. they have sugar free oreos for a crust. put some in batter and then on top. then he would not be deprived at all.
