I posted in the Christmas gifts thread about making cracker jack at Christmas and have received a request for the recipe. Here ya go!:chef:

2 gallons unsalted popped corn
2 sticks butter or margarine
2 cups brown sugar
1/2 cup corn syrup
1/2 tsp baking soda
1 tsp vanilla

Melt butter, add sugar and corn syrup. Boil for 5 mins. DON'T OVERCOOK!
Add soda and vanilla and stir. Pour over popped corn and stir to coat. Bake 250 degrees for 1 hour stirring every 15 mins. Store in an air tight container. We usually use those tins that popcorn comes in at the holidays. It'll keep for at least a month.

Be sure you have a large enough pan to put the popped corn in and still be able to stir it. Mom always used her big turkey roasting pan. I have a full size steam table pan (the deepest one) that I use but I usually make a double recipe each time. Pop the corn and use a gallon pitcher to measure. Works well with either butter or margarine. Your choice. You can add nuts if you want but we found that they just end up on the bottom of the container so we leave them out. This is a great time to use your air popper! I don't use microwave popcorn either because it is usually salted which changes the flavor.
