Freezing lemon curd?

I made some lemon bars from a Passover recipe (no grain products- flour, corn starch, etc.). I had lemon topping mixture left, which included fresh lemon juice, whole eggs, sugar and potato starch. I cooked the leftover lemon topping in a double boiler until it was thick enough to leave a track when I drew a line on the back of the spoon. It's now in the fridge, waiting to be made into something else- or discarded.

Can I freeze it? I have about a cup and a half of lemon curd.
 
It'll keep for a while in the fridge. I wouldn't freeze it. I think it will separate.

You can use it on a toasted english muffin. It's great that way.
You could make individual tarts and fill them with the lemon curd.
 
hmmmm I'll bet it would be good atop matzoh. I wouldn't freeze it. It will keep several weeks in the fridge. That is, unless the "elves" get at it. :LOL:

No, it won't freeze. I did an experiment once to see if I could make it ahead for a wedding cake as I has lots to do. But it does keep well in the refrigerator. There are so many uses for it that it won't last long! I have even put it on vanilla ice cream!
