Does anyone know if honey or light corn syrup could be used instead of dark molasses? I am making pumpkin muffins and only need 3 tablespoons of molasses. I don't mind if not using molasses makes the batter lighter in color. I'm thinking about the consistency of the batter and will it bake correctly? Thanks for any help.

Those two substitutions should work just fine. They are all three interchangeable consistency wise, of course not flavor wise.

Thanks, salt and pepper and bake chef! I'm making the muffins this morning and will decide whether to use honey, corn syrup (with a little brown sugar) or maybe a combo of each! I appreciate your help! Happy Thanksgiving!
