Returning to the theme of this thread.....I have discovered a more eggy way of making scrambled egg (on toast).
I know you can add an extra egg yolk but I find it makes little difference....maybe more than 1 egg yolk might but sounds extravagant for a breakfast. Instead of cracking 2 eggs into the pan, I just added 1 egg and the egg white of the other one. When the scrambled eggs were lightly done (how I like them), I then added the raw yolk into it and mixed it in. Result? Definitely the more eggy scrambled eggs I had been desiring!
