    Cooking spinach questions

Yeah, I have also read articles before that frozen vegetables are as good as fresh vege. My favorite way of cooking spinach is to saute it with garlic, pine nuts and dried cranberries. Simply delicious!

    What are you baking today?

Whole Wheat Banana Nut Bread From AllRecipes.com I replaced chopped walnuts with sliced almonds because that is what I had in my pantry. So moist and absolutely delicious! Didn't mind eating more because it's healthy too! Had a nice picture too, but the file size is too big!

Fruits and veggies in your diet

I definitely try to eat as many vegetables and fruits every day. Typically I would have 2 or 3 types of fruits per day and also 2 or 3 types of vege per day. I always like to include different 'color' of vege, like dark green (spinach, broccoli), red (tomato), orange (carrots), light green...

Too many chilis - how to cool it down?

Yeah I agree, adding more of the other ingredients (like chicken broth and coconut milk you mentioned) is the only option, or the chicken pieces itself or any vegetables you have in the dish. Also, eat with more steamed rice, that should help I hope!
