What can I do to get a lighter bread??

PS, I make a bread very similar to what you are doing, but I use only one Tablespoon of ADY. Most of the time, I actually substitute one cup of sourdough starter for the yeast. Other than that, it is identical. Pan size, baking temperature, time, etc. When you shape the dough to pan it...

What can I do to get a lighter bread??

Unless your kitchen is VERY warm, I agree that the dough might not be rising enough. 30 minutes seems awfully short for a second rise. Is it actually getting to the 1 inch above the pans in that time? You might want to try the "finger poke" test. Put your index and middle finger together. Poke...

    ISO Pickled Green Tomatoes recipes

If you have access to a Ball's Canning book, there is a recipe for dilled green tomatoes that I use. You can also "google" dilled green tomatoes. I cut the small ones up into quarters and put in pint jars. Add a garlic clove, a bay leave and some dill (fresh, if you have it - if not about a...

    Can you make mozzarella cheese?

Here's a site from a professor at the University of Cinncinati that I use for all my cheese making techniques. The "Farmer's Cheese" is one of my favorites. Fankhauser's Cheese Page In fact, on the American Mozz, he specifically says he used homogonized cow milk.

    DirecTV Boycott!

I encountered much the same thing with DirectTv's competitor. Turns out I was dealing with an overseas call center where I assure you English was not the "mother tongue". After talking for 30 mins, I asked for a supervisor. "I take care of your problem." 20 more minutes of asking for an...

    Need your help

I answered your survey, but I am sure I skewed it for you. The company I work for provides coffee and tea. The only soft drinks I purchase "out" are the ones I buy when I am doing mystery shops on fast food establishments. And have never been in a coffee house in my life. I refuse to pay 6...

    Birds Eat Tomatoes?

An old apple growers' trick which is SUPPOSED to work is to hang red Christmas tree bulbs. The birds are supposed to peck on them and find they are inedible and then don't bother the apples when they ripen. Not speaking from experience, but it sounds good!

I'm not usually one to complain about rain

    Compost

I used 3 pallets for mine, but didn't even bother to nail them together. I just used some wire coat hangers twisted together to keep them upright. If you need another compartment, just add on one more to the back side and the side. The 3 pallets look like the letter "U" and the other two, when...

    Upside-Down Tomatoes?

I just planted six tomato plants upside down last night. I bought the 5 gallon buckets at the 'helpful hardware place" and they happened to be on sale. I drilled 2.5 inch holes in the bottoms and put some foam rubber in the bottoms. Cut an "X" where the hole is. Stuff the plant up thru the...

    What are you baking today?

I mixed up a triple batch of sourdough this morning before I left for work. When I get home, one batch will have cinnamon, raisins and pecans added, one batch will be baked as a straight sourdough and the third batch will have cinnamon, raisins, pecans AND chocoloate chips. Then I will whip up...

    Baking stones

I bought my unglazed quarry tile at Home Depot. I think I paid about 60 cents each and they even cut two of them for a buck. Measure the inside of your oven and leave about an inch or so clearance on each side and front and back. I bake all my artisian style breads as well as my pizza on them.

    Poor Service

It depends on the circumstances. I agree that poor food prep by the cook should not be taken out on the server. But, if the server is inattentive, sloppy, uncaring, then that is a different matter. Having worked in the food service industry and now doing mystery shopping for several food...

    Help on stainless steel pan

SS frying pan Andy, I am not sure on the layers. I threw the wrapper away, of course! I tried it with heating the pan and oil this morning with hashbrowns and waited. Still got about a 1/16th inch stcik on the bottom. Night before last, the breaded pork chops were a bit more successful...

    Help on stainless steel pan

Several weeks ago, I bought a T-Fal 10 inch stainless steel frying pan. Everything sticks to the bottom. I have tried to season it like a cast iron with no luck. I have tried to heat it up at low temp and add shortening and at high temp and add shortening. I have tried Crisco, oil, butter...

I need advice on dutch oven for making crusty bread

Just to add to your frustration, where she says you have to have the oven preheated, I also do that recipe from a cold oven. You might need to check to see how long it actually takes your oven to reach the 450°F. You will need to add that time to the baking time. I like to do it with a cold...
