    Left-out, sealed garlic in stew

My wife just made a whole beef stew, but I learned that she chopped up the garlic the night before and left it out (on the counter) in a sealed plastic bag. We'd hate to waste a whole stew, but there's quite a bit of garlic and she'll be serving it to a bunch of friends (some pregnant). It's...

    Refrigerate homemade biscuits?

I just made these biscuits: YouTube - How To Make Biscuits which include buttermilk. I'm not sure how to store them. I was thinking a plastic bag on the counter top, but should I refrigerate them since they were made with dairy?

    Left beef stew out

I left a ton of home-made beef stew out for about 10-12 hours last night. It was in a closed, but not air-tight plastic container (it's warped, so it doesn't seal). It sat on my kitchen counter, so it was at about 65 degrees. Is there any hope for this, or do I have to throw it all out?

    Switching to stainless steel

I got a beautiful set of stainless steel Calphalon pots and pans as a wedding present. Previously, I was using a simple non-stick set. I'm finding it a little difficult to transition, at least when sauteing things. The pants came with a little insert that said it is recommended that I use low...

    Actual Cage Free Eggs?

I buy those Eggland's Best eggs for like $3.50 per dozen, because I believe that battery caged chickens are inhuman and less healthy. However, I've heard that a lot of egg sellers just put "Cage Free" or "Free Range" on their cartons and get away with it by letting their chickens around around...

    Tofu "Patties"

There's a restaurant near me that makes the most amazing tofu sandwiches, and they use these thing slabs of tofu. They're a little less than a cenimeter in thickness, and they're almost tough and chewy. I'm almost positive that they're baking them. Does anyone have a recipe or simply know the...

    Weird feeling after eating almonds

I have a dish on my desk that contains some roasted cashes, roasted almonds, and raw almonds. I eat a few every now and then as a nice little protein based snack. However, afterward, I sometimes get a very weird feeling in my mouth, and I think it's because of the almonds, maybe because of the...

Is it alright to be hungry?

I'm overweight and, along with exercise, I am trying to cut back in how much I eat at lunch. I can eat a lot, and normally I'd eat 2-3 sandwiches along with 2 side items (things like fruit, salad, crackers, soup, cereal, etc.) for lunch, and I'm looking to scale that back to a single sandwich...

    HDLs and red wine

I hear drinking red wine is good for you, and I believe this is because it is high in HDLs. I don't drink, but I am open to cooking with red wine. Does this still provide the HDLs, or are they found in the alcohol that gets burned away while cooking?

    Frying vs. Roasting

I fry a lot because it's easy. I heat some oil (sometimes with a little butter for added flavor) in a pan and add meat, veggies, or tofu and cook to deliciousness. However, I wonder about the health implications of cooking this way. My questions are: 1. Are vegetable, peanut, canola, and olive...

Warm spinach, potato, and onion salad

I made a great salad on a whim last night, and I thought I'd share: Potatoes - 3 medium Onions - 1 large Portobello - 1 Cap Garlic - 2 cloves Tomato - 1 Spinach - 1 large handful Merlot - 1 splash Salt, pepper, parsley, butter (or cooking oil) Bacon Bits (optional) I just chopped up all of the...

    Herbs

I know it's winter, but does anyone have any recommendation on where to come by some fresh herbs? Or even, for that matter, in the summer? All I can seem to find is the boxed semi-fresh stuff, which is, in my oppinion not worth buying. Barring the occasional bit of basil I can find at the...

    Onion free vegetable stock

Does anyone know of a good vegetable stock that doesn't include onions? My girlfriend is allergic to them. So far, I've been using a fried pepper purée of my own design (1 green pepper, 2 red peppers, 3 tomatoes heated in olive oil, then blended, and then cut with 3-4 times as much water) which...

    Parchment

I have a quick question. I have some cookie dough cooling in the fridge for a new recipe, and this recipe calls for the cookies to be baked on parchment paper. The cookies need a while before they're ready to bake, so I could run out to the store and grab some, but I'd really rather not make the...

    Bed, Bath, and Broke

I, an aspiring amateur chef, find myself always in need of new gear. Ramekins for my cremé brulée, a pie pan, a stand grater, etc. However, I find myself paying far more for these items than I think I should. And when I'm not, I find myself questioning the quality of the gear, such as the...

    White sugar replacement?

I do a lot of baking, and I end up using a lot of sugar. I'm open to low sugar recipes, but for the recipes that I do like, I'd like to be using a lot less sugar. For example, my cupcake recipe: Flour - 2 cups Sugar - 2 cups Egg Whites - 2 Baking Soda - 2 tspn Vanilla extra - 1 tspn Crushed...

    Crockpot overcooking?

I received a crockpot for Christmas and I really like it. I made a delicious beef stew for very little money, time, and effort. It works really well for me for recipes that require a long time, as I just stick them in and go to work. However, I'm wondering about recipes with shorter times and...

    Slicing meat or online shopping?

In college I worked during breaks at the best little italian deli. We served really good products and really low prices. I now live about 200 miles away, and the deli closed anyway, but for the life of me, I can't find a good, local source of lunchmeat. I work, and like to pack my lunches rather...

    Dried, salted green peas

A local market sells these containers of salted, green peas. A container is about half a pound, and I go through one in usually one or two weaks (they're quite tasty). The label has hardly any info on it, though, just that it includes peas, salt, palm oil, and artificial coloring. My question...

    Fried carrots?

I was making chicken the other night. I just fried it in a pan with some olive oil, adding slat, pepper, and a slice or two of tomoato per chicken breast. I wanted to experiment a little, so I sliced maybe a dozen or so baby carrots and half and threw them in. They turned out really great, good...

    Santoku as chef's knife

I'm a recent college grad and will be getting my first apartment rather soon. As such, I'm excited to start constructing (and filling) my kitchen. As I am a novice at best in the kitchen, I'm going to start with only the essentials, so I'm looking to get 3 knives: a primary chef's knife, a...

    Seltzer Water

I wasn't entirely sure where to put this thread, so I guessed and went here. Anyway, I love club soda, seltzer, carbonated water whatever you wanna call it. Love the stuff (especially with a little wedge of lime). I remember seeing on Good Eats, Alton was talking about bottles with small...

    Job Suggestions

I'm a recent college graduate and the job market is kind of rough right now. I don't anticipate having a job in the near future, but I need something to tide me over in the meantime. Where you fine folks come in is the type of work I'm interested in. I'm looking for just about anything I can...

    How to cook flank steak?

When I was last at my parents house, my mom made flank steak. All she did was throw it on the gril and cover it with this montreal steak seasoning and it was like the most delicious thing ever. I have the steak, I have the seasoning, I do not have a grill. I would assume I can just use my oven...
