Why do my pancakes look like this?

Flat Pancakes I also come out with flat, not-quite-cooked pancakes. Even when first side down is brown and air bubbles indicate readiness for turning, I am still getting some raw batter in the middle of each cake at end of process...even when second side is pretty dark. I'll try dialing the...

    Today is National PIE Day!

I made a big, fat, yummy deep-dish apple pie yesterday...hadn't looked at my calendar, either! I just love pie. Used a crust recipe from Ken Haedrich's "Pie." Still not confident/proficient with crust, but I intend to keep practicing, as my waistline will tolerate...o:)

    Flour for making pizza

I got an Emile Henry baking stone for Christmas, and it works well in a home oven. I, too, saw the Jamie Oliver pizza dough recipe...here at DC when a member recommended it. But, even though I found semolina flour at a local specialty food shop, haven't tried recipe yet 'cause it seems...

    Bacon in Brownies?

Haven't had a bacon brownie but tried some Toll House-type cookies w/bacon, and they were good...The sweet/salty combo was pleasing. I'm with Alix on the frosting; it might be too much. Looking forward to seeing what you think.

    Horseradish cheese

Our neighbor, who is from Wisconsin, gives us a couple of tubs of cheese each year for Christmas. One is horseradish cheddar, and it's outstanding!

Sour Cream Coffee Cake w/Toasted Pecan Filling Today, made Carole Walter's Sour Cream Coffee Cake with Toasted Pecan Filling (Oct. 2009 Fine Cooking Magazine). Decadent!! I don't indulge in something like this often, but once in a while....yum. I'm surprised my arteries are still working...

    Help -- Chili Too Spicy!

Chili Tx, all. Tried a bit more olive oil and some plain Greek yogurt...it helped a little. Froze most of the leftovers and will thin w/more stock and tomatoes, as suggested. Recipe had good flavors...just too much heat. Will mix my chili powders more carefully and use more sparingly next time...

    Help -- Chili Too Spicy!

Almost ready to serve dinner chili to hubby, but it has too much heat. Recipe called for 1/4 cup of chili powder, and I combined regular (Gebhardt brand) with some ancho and chipotle powders. Also subbed one ribbed, seeded serrano pepper for jalapeno, as grocery didn't have latter. Already added...

White Whole Wheat Flour for Pizza Dough?

Pizza Dough with White Whole Wheat Flour Used white whole wheat flour (50 percent...other half was bread flour) tonight for hubby's and my first homemade pizza crust. It tasted good! Looking forward to many more, with different toppings, and better ability to roll crust out thin. Yay!

Monday 1/16/2012 What's cookin' good lookin'?

Homemaade Pizza! Tonight's dinner was homemade cheese pizza! This was our first try at it, and it came out better than expected. It's hard to roll out the crust thin enough. But practice, practice will make better. My biggest problem, as usual...is portion control!

    Stevia Sweetener

Stevia/Tried Erythritol? I also don't like the taste of Stevia. I found something called Organic Zero (erythritol), which tastes exactly like sugar but doesn't spike the blood sugar/is safe for diabetics and doesn't decay teeth. It's more expensive than Stevia, but I think the good taste and...

    Christmas Fruit Cake

Christmas Fruitcake Princess: You have come to the right place!! Here's my recipe. I think it's the best I've ever had; it's my personal adaptation of the 1984 McCall's Cookbook's Dearborn Inn Fruitcake. Enjoy! :yum: Ingredients 1 ½ cups dark raisins 1 ½ cups golden raisins 1 ½ cups currants...

    Friday 6th Jan 2012 what's for dinner?

What's For Dinner Yum...Tonight I made Vietnamese Chicken Noodle Soup, from Nina Simond's A Spoonful of Ginger. Homemade chicken broth with fish sauce, black pepper, rice noodles, chicken, bean sprouts, and accompanying basil, cilantro, scallion greens, and lime. Great any night but I'm...

    Le Cuistot cookware

Note on Lodge Enameled Cast Iron/Made in /China Forgot to note that, in case it's a concern, the Lodge Dutch oven is made in China (I think). I'd rather it had been made here, but this factor didn't keep me from purchasing it, with the good reputation and great price point.

    Le Cuistot cookware

LC Slett: I haven't heard of Le Cuistot. Recently, though, after some research, I purchased a 6-1/2 quart Dutch oven from Lodge. Got it at my local Target, and it was much less expensive than Le Creuset. I've been thrilled with it so far...no rust, no chipping of the enamel coating, etc. Good...

Dinner Tonight/Chili Tonight we had Chunky Vegetarian Chili, homemade cornbread, and a green salad. Here's the recipe, from Cooking Light: Chunky Vegetarian Chili Recipe | MyRecipes.com I usually avoid anything called vegetarian chili, but this sounded really good so gave it a try. It...

Slow Cooker/Leave it On When Leave House?

Slow Cooker Thanks, all, for good input. I like suggestions to put cooker on cookie sheet on top of stove if nervous about leaving it. Since my old Crock Pot is no longer heating right, I went ahead and ordered the Crock Pot 6.5-quart touch screen recommended by Cooks Illustrated. Sounds like...

    Question About Fennel

Fennel I also used fennel for the first time recently...had never tasted it or bought and chopped it. I would also liken it more to celery (color and crunch) than to onion, even though it has a bulb. I used this veg in a tomoto soup with chunks of potato...it was very good. Mild licorice flavor...

Dinner for Tuesday, January 3, 2012

Orange Chicken Vanilla: Was just thinking that, while this dish is much lighter than you'd find in a restaurant, it's also way tastier. A definite keeper. Now I'm trying to go watch the Iowa Caucuses and stay away from leftovers. Life is hard!

    Who's Trying to Lose Weight?

Keep UP Good Work Powerplantop: Good work! I, too, am trying to stay trimmer and have had success. I'll turn 50 in July and want to have plenty of energy and be lean and mean. Dieting never works for me; it has a psychological boomerang effect. Instead, I eat mostly healthy but let myself...

    Clementine and Five-Spice Chicken

I'm Scraping the Pan... Dawgluver: I just actually almost licked the pan when I went to wash it. The sauce is so yummy. I didn't quite stoop that low...I used a spatula!!!

Dinner for Tuesday, January 3, 2012

Just made and ate the Clementine and Five-Spice Chicken from Feb. issue of Eating Well. Highly recommended for anyone who likes Asian flavors...absolutely scrumptious. And easy. I've now had the one serving I'm allowing myself and struggling not to eat the whole pan!
