Finally.
Praise be to Craigslist and $100!!!!
In my hometown, there was a Mexican restaurant that served
the BEST refried beans, salsa and stew beef style burritos I
have ever had.
The beans had FLAVOR and texture. They weren't these soupy
things you get in 99% of restaurants and 100% of canned refried
beans.
The salsa was simple, tangy and not too hot.
The beef burrito enchilada style was heavenly.
I ate the same meal there for 25 years: Beef burrito enchilada style and a plate of refried beans.
At least 2-3 times a month. I loved this food!
In 1999, I moved 2000 miles away. To prepare myself, I begged
the owner and waitresses and manager for the recipes. Swore on
my honor they would be kept secret forever....
NO. NO. NO.
So I went for a few years with no Heavenly Food. Actually had my
future wife, who visited NC, bring me back some! She got the wrong
burrito, but I still got beans...
Then I moved back. YAYY! One year later, the restaurant closed. WAHHH!
So, since 2003, I have been jonesing, in withdrawal, and experimenting
with bean and meat recipes. I got close with the beans, but not too
close with the burrito meat.
So the other day, just for kicks, I posted a request for the recipes on
Craigslist in the town where the restaurant was.
A former worker contacted me, and after negotiations between her, me and
the owner of the restaurant...
I HAVE MY RECIPES!!!! PRAISE BE!!!
Can't post them cuz part of the deal was secrecy, but I can say that
SIMPLE is best... at least with these.
I will be fat and happy this weekend. My wife will be really tired of beans
and burritos and salsa before too long too!
Life is good. (Aside from a leaking hot water heater, right after a plumbing
leak, LOL!)
