im looking for some ideas to cook oats other than sweet methods.

Yes.

Or in my case, I buy them in bulk and I often buy thick cut, so I add 2 parts water per one part oats and simmer until the oats have fully absorbed the water. To simmer, I just get my water to a good boil, then turn the heat down to low and cover the pot. After the water is absorbed by the oats, I add my salt, margarine, and pecans (all amounts to taste) and stir thoroughly.

You can add the pecans to the oats and boil them along with the oatmeal, which I sometimes do, but that will make the pecans soft and not crunchy.

Make your oatmeal the normal way and then add a large spoonful of peanut butter. Then slice a banana into the oatmeal. Use milk to adjust consistency. It's the most delicious breakfast ever and it keeps you full for a very long time. I'm not sure if that's exactly "savory" (it is rather sweet) but not nearly so much as adding brown sugar or syrup as some do.
