Have any fresh broccoli,asparagus,or green beans? If so this sauce goes with any of them. The flavor is fresh and like spring to me. As much as I enjoy hollandaise this makes a nice replacement. Lemon Cream Sauce
In a saucepan melt 4 tab. butter and all but 2 tab. of the cream you will need 3/4 c. heavy cream Cook over low heat for 5 min. In bowl beat together 1 egg, 1/4 tea each salt and pepper and the remaining 2 Tab. cream Add 2 Tab. fresh grated parmesan along with 1/4 tea nutmeg fresh grated Beating constantly with a whisk slowly add 3-4 tea. lemon juice Stir this into butter cream mixture and cookover med heat til well thickened. Mixture should coat back of spoon
