We had a large early-morning gathering today and, as usual, I was asked to prepare the main dish for 40 people. I opted to do a variation of the highly-rated Amish Breakfast Casserole from Allrecipes.com. The original version serves 12 and can be found here: Amish Breakfast Casserole - Allrecipes.
I needed to triple the recipe and make some adjustments to the proportions. It turned out terrific and I thought I'd share the recipe:
Breakfast Casserole For A Crowd (serves 40)
2 lbs sliced bacon
2 medium onions, finely chopped
2 dozen eggs, lightly beaten
12 cups frozen hashbrowns (defrosted), or equivalent freshly grated (about 3 lbs)
2 lbs cheddar cheese, grated
1 lb swiss cheese, grated
1 16 oz container small curd cottage cheese
Black pepper to taste (no additional salt is needed)
Cook bacon, drain, and crumble it. Saute onion until limp in a little of the bacon grease.
In a large mixing bowl crumble the defrosted hashbrowns, add remaining ingredients. Mix well and pour into a full sheet pan or 2 half sheet pans. Bake at 350F, 40 minutes. Let stand a few minutes before serving.
