I love this recipe and I would make it more often if I didn't forget about buying green onions. Usually have on hand everything else.

It has cornmeal and milk base and wants that thickens, you add salt, red pepper, cheese, two eggs, corn and butter and then bake it. Put part of the cheese on top.

I used to make something similar that used a small can of drained diced green chilis from the emergency shelf.

That would be good. You can put different things in there. I might put a poblano next time.

Another kind of Native American recipe kind of related to it is pan bread. You can put whatever in it but it is flat more like a pancake in shape and kind of chewy crispy. I didn't grow up with either one of those but a lot of people did. I haven't made that in a long time.
