Just an update - Todays lunch included some extra goodies.
"Sweet nuggets" (creamcheese, pwdered sugar, toasted coconut, rolled in toasted pecans)
Stuffed celery - yup w/creamcheese.

I just got a phone call from DH asking how long the torture would continue. Feeling just a bit guilty..... :(

Off to buy cauliflower....

Many years ago, abck when I was just barely out of my teens (back when the first axles were invented), I was hungry for some cheese, colby cheese, Kraft yellow coolby cheese. So I went to the store across from my barracks and bought a 1 lb chub of Kraft Longhorn Colbly Cheese. I removed teh wax and began to knaw on that chunk of cheese.

Let it be noted that at that time in my life, I could down two 3/4 pound burgers, with a side of fries, a bowl of chili, and a large strawberry malt.

Half way through the cheese, I got so sick of it that I had to throw the half lbs of remaining cheese away as there were no refrigerators in the barracks, and I just couldn't eat any more.

Yes, too much of a good thing is no longer a good thing.

I use it often as a nice velvety touch to risotto, after the last reduction, depending on how much you are cooking, 1/2 cup or so for every 4 portions. Delicious!

Be popular with your neighbors and make a cheesecake for each close by neighbor. You'll be the toast of town... Giving food as a gift is a great friend maker.
