took the leftover ratatouille and grilled chicken, cut up the chicken off the bone, put all together in a pan with lid and all the juices form both and heated, tossed on some parm cheese at the end and served over couscous. Also had pita bread and homemade humus. It was wonderful.
 
Last night we tried a new organic chicken sausage flavor - "Chipotle Mango". Although I'm not a fan of "sweet" sausages, these were quite good - smoky & slightly spicy/sweet. I just pan-fried them up in some extra-virgin olive oil. Husband had his with a side of plain buttered Barilla rotini pasta (his choice), while I just had mine with a mixed green salad.
