first question is are they interchangeable? In other words if a recipe asks for 3 cups of broth can I use 3 bouillon cubes instead? What is the difference between the two?

You need to consult the package and then adjust the amount to your own personal taste.

I use the powders, cubes, and paste because they are convenient.

Water is still a good option in soups and sauces. You may need to adjust the seasoning and add a splash of soy sauce or Worcestershire sauce.

Don’t be afraid to experiment.
