Hello all.....Just found you folks, and this sounds great. I'm not much of a typist, so forgive all little errors and slo speed. Like to cook and experiment some with new ideas. Just was reading re: pork chops, and as I scrolled down I noticed info about brining chops. If there's one thing ever that makes ALL the diff in cookin ' great chops.....it's brining. Doesn't have to be an hour, but 30 mins isa must. You'll C the diff. I cook mostly for 2 and cutting recipes is sometimes difficult. In summer we like bbq, winter too. I'm from Ma., and rite now we're goin thru a warm spell..it's around 10°. Wish U all well. Mudster
