Why did someone pick such an awful name for liver, gizzards and hearts like "offals"? I am definitely a fan of entrails, patés etc..I used to hunt them at night..."headlighting" it was called...Make a large loop behind the house and come home with just about as many as you wanted to dress....Today they are few a far between...Fire Ants, Coyotes, pesticides?? I dunno.
Then I got into raising them...9 does...3 bucks...More fryers than I could keep up with...
I'm not a big fan of liver...However domestic rabbit liver is fantastic!! Dusted with flour and fried...very tender and mild flavor...Excellent meat!
