Apricot brandyIngredients: 3 kgs ripe apricots
3 kgs sugar
1,5 l vodka
Directions: Choose small, ripe apricots. Wash and prick each one in several places with a thick pin. Place them in a 5-6 qt/5-6 l glass jar with large opening. Place a layer of apricots, a layer of sugar, alternating between the two and making sure the last layer is sugar. Pour the vodka, cover the opening with cellophane or parchment paper and keep in a sunny place for 3-4 weeks, shaking the jar every 2-3 days. After this time, keep the jar in a cool place. When serving, strain through cheese cloth. You can use the apricots as filling for cakes or you can boil them in water with sugar and serve as compote.
