Sherried Shrimp w/Garlic

I'm thinking New Year's Eve, maybe?

SHERRIED SHRIMP W/GARLIC

4 servings

1lb. large shrimp
¼ cup dry sherry
2T orange juice
½ cup roasted red pepper
10 ripe olives
2T parsley
3 cloves garlic
2tsp. capers
2tsp. tomato paste
salt/pepper
olive oil

Peel and devein shrimp. Combine sherry, oj, roasted pepper, olives, parsley, garlic, capers, tomato paste, salt/pepper, in large skillet; bring to boiling; add shrimp; cook and stir for 1-3 minutes, til shrimp are pink. stir in olive oil.
 
This is a pretty classic Spanish recipe, and it's wonderful - if you can find blood oranges, use them for the orange juice!
