Sorbitol alternatives?

In general have heard good things about sorbitol in small quantities, but are there more healthy ingredients that maintain moisture in foods such as gummy snacks? A more gummy texture?
 
corn syrup, glucose, honey, agave syrup, maple syrup (dark), sugar free gelatin (like Jell-O, sugar free Kool-Aid with unflavored gelatin).

Technical sorbitol is a sugar alcohol. My recipe already has corn syrup and flavorless gelatin. Maybe the gelatin makes it too stiff and I can reduce from 6 packs to 4? Does honey have similar chemical effect of gummy texture? Maintains moisture? I am not as keen on maple syrup since I assume it would darken the gummy which I dye with food coloring.
