in israel we love thin fried patties. they can be made with different veggies and/or different meats along with eggs flour and spices.
in hebrew the word for patties is ktzizot and these chicken and vegetables ones called in iraqi jewish.. arookh.

i like them dark and they are much better cold after staying in the fridge

Do you have a recipe or two? How are they used? I see you put one on bread. Are they ever the main dish in a meal? Are they used as a snack or meze?
 
i will try to translate later

they can be a snack, eaten in pita, eaten from a dinner platter at the center of the table along other foods,
they are versatile.
the fact that they are one or two bites size is cool
many israelis want to bake them as a more healthy version but it is awful and not tasty.

this recipe is without some extra things that I've added. for instance. I've used bright green zucchini that i grated.. (ive used ground chicken breast too)
dont forget to squizze the grated fresh vegetables well bofore mixing with the rest of the ingridients. u can use some salt so it is easier to draw the liquid from the fresh veggies.

edit.. i've added the forggoten chicken and adjusted some of the ingredients.

• One medium potato peeled and cooked through and mashed.

• One medium potato peeled and grated on a grater (coarse side)

• one medium zuccihini, peeled and grated on a grater (coarse side)

• one medium onion, peeled and grated on a grater (coarse side)

• handful of parsley chopped

• handful of cilantro chopped

• 1/2-3/4 teaspoon table salt [you will test for saltiness in the microwave. feel free to add more if needed]

• 1/2 teaspoon ground cumin [you can use less]

• 1/4-3/4 teaspoon mono-sodium glutamate [optional but recommended]

• 1/3 teaspoon granulated garlic

• 1/3 teaspoon grounded black pepper

• 2 flat tablespoon of all purpose flour

• 250 grams of ground chicken breast

• 5 eggs

• vegetable oil for frying


1) take the grated raw potato, grated zucchini and grated onion and squize out their water well.

2) Mix all of the ingredients together very well.

3) put a bit in the microwave and taste for saltiness.

4) Heat about 1 cup of oil in a big non stick pan on medium heat.

5) Scoop the mixture with a spoon and put in the hot oil and flatten the patty so it’s fairly thin.

Do couple more but don’t crowed them much.

6) Move them with two forks occasionally and when they are dark, flip over and do the same on the other side.

7) Remove to a plate with a paper towel.

8) Add more oil if needed. repeat with the rest [might take time] and stack them over more paper towels.

9) Let them cool and put in the fridge. They are tastier once cold.


edit..

i've ommited the carrot. i don't like it in this recipe much.

wait a moment. i forgot the chicken. i will need to fix it later. i translated a recipe that is vegetarian and forgot the chicken.....
