Wednesday, June 14th, Is it "live" or "leftovers?" What is for dinner?

For me, it is leftovers. Sauced pork chops with dill-buttered corn, cucumber and tomato salad, and watermelon. It was yummy last night so I am hoping for a solid repeat!

Haven't been able to make up my mind, had so many things on my "Today's To Do List" and not much of it got done. Including deciding on supper.
One thing for sure though, is a Tomato Cucumber Salad almost identical to Kathleen's!

More pasta!

I made a quick raw sauce with a tomato, onion, garlic, a few ripe olives and a splash of olive oil.

The hot whole wheat penne pasta warmed the sauce.

I topped it with a sprinkle of pecorino Romano grated cheese.

Bea, I'm jealous. Sitting here eating Chef Bourdi's Ravioli from a can. Over cooked it in a crock pot of all things.

Ours is leftover from lunch today - ham, cabbage,and boiled potatoes. Have a sliced tomato and cucumber sticks, and will fix a can of biscuits.

I always have a couple cans of Chef Boyardee ravioli on the emergency shelf.

Sometimes I laugh when I sprinkle $20.00/pound grated cheese on a $1.25 can of ravioli!

Life doesn’t always have to make sense!

So warm here, we had a cold pasta salad with toasted foccacia bread and olive oil/pepper dip.

Pan seared pork tenderloin medallions, Spanish rice and broiled zucchini seasoned with Cavender's.

We ordered pizzas. I really like the pizzas from this place. And, they are fine about not putting tomato sauce on mine.

Just more of that leftover curry, and later, a mango, banana, and pineapple smoothie, with a little coconut flavor, with a little yogurt and chia seeds. More of that leftover for tomorrow.
